Carbo loading (the past couple of days… or has it been months?) but with no marathon to run, I decided to give it break and make myself some… fish. Salmon, to be exact. It’s been a good couple of years since my parents force-fed me what I had claimed in my youth, in their words, as “my new favorite dish,” so it was pretty safe to assume I could probably stomach this one without gagging. To be safe, I did something they never did to salmon. I made a balsamic-honey sauce.
Balsamic Honey Salmon over Cabbage
Balsamic Honey Sauce
- 2 tbsp of balsamic vinegar
- 1/2 tbsp of honey
- 1 tbsp of water
- 1 tsp of rosemary, finely chopped
- a single portion of salmon
- cabbage, chopped
- 1 clove of garlic, sliced
- salt and pepper
Salt and pepper the fish on both sides. Place in skillet and cook for 4 minutes on each side. While the salmon is cooking, prepare the sauce by whisking all the ingredients together. When the fish is done, remove and drain on paper towel. Pour out the excess fat in the skillet, and then pour in the sauce (which will start bubbling diabolically) heating it up and letting it thicken for a couple of minutes. I saute the cabbage with some garlic and olive oil, and season with salt and pepper.
Plate it, but do it better than my sloppy job of piling the cabbage in the center while balancing the salmon fillets precariously on top of each other. Smear Drizzle the sauce over the fish. (Good thing I don’t build homes out of food.)
